Breakfast special: Poha (Cooked rice flakes)


Simple, healthy and tasty breakfast for all: Poha.




Ingredients:

  • Poha/ Rice flakes - 2 small cups
  • Chopped and cooked potato - 1
  • Chopped onion - 1
  • Chopped green chilly - 2
  • Crushed ginger and garlic
  • Peanuts
  • Lemon - 1/2
  • Curry leaves
  • Coriander leaves
  • Mustard seeds
  • Coriander/ Dhaniya seeds
  • Asafoetida/ Hing powder
  • Fenugreek/ Methi powder
  • Turmeric powder
  • Salt
  • Edible oil






Preparation:

  • Sprinkle little water on poha (rice flakes) and soak for 4 mins.
  • Heat a deep pan and pour edible oil. Wait till ioil is hot.
  • Add mustard seeds and wait till it crackles and add peanuts and fry for 3 mins.
  • Add curry leaves, green chilies, crushed ginder-garlic and chopped onions. Saute well for 3 mins.
  • Once onions become transparent, add the chopped potatoes and spices and saute well.
  • Drain water thoroughly from the poha, mix well and cook for 3 mins.
  • Switch off the flame and close it with a lid and let it remain for 5 mins.
  • Squeeze lemon over cooked poha and garnish with coriander leaves.

Time to serve!
