Breakfast special: Aval Varattiyathu / Sweet Rice Flakes Pudding

Aval (Avlakki/ Rice flakes) can be used in many ways to make quick and delicious breakfast/ snack. I'm here presenting a simple form of sweet pudding made out of rice flakes/ aval. The dish involves melted jaggery and is usually prepared in Kerala and Tamil Nadu. It tastes best with banana. 
Cooking time: 20 mins. Serves for 2.




Ingredients:

  • Aval/ Avlakki/ Rice flakes - 2 small cups
  • Jaggery/ Sharkara - 1 lump
  • Ghee/ Butter
  • Grated coconut - 1/4 of a coconut
  • Sesame seeds/ Ellu/ Til ke beej (black)
  • Channa dal/ Kadala parippu/ Split chick peas
  • Cardamoms (crushed) - 3
  • Cloves - 3
  • Chopped almonds
  • Chopped cashews
  • Kismis/ Raisins



Preparation:
  • Sprinkle very little water on rice flakes/ aval/ avlakki and keep for 3-4 mins.
  • Take a frying pan, add ghee and wait till it melts.
  • Add jaggery and let it melt well.

  • In another frying pan, fry chopped cashews, almonds, raisins and channa dal (kadala parippu/ chick peas) in ghee.

  • Once the jaggery melts well, add the rice flakes into it and mix well.
  • Add the grated coconut, cardamoms, cloves and sesame seeds and mix well.
  • Stir for 4-5 mins and turn off the flame.
  • Add the fried cashews, raisins etc to the rice flakes and decorate with little grated coconut.

This yummy and quick breakfast is ready to eat. Team up this sweet dish with a banana which will balance the sweetness. Enjoy!
