How to make Appam batter?


Appam is a delicious dish made in Kerala. It is good for breakfast as well as dinner. Appam batter preparation is pretty easy. You can try this during weekends. The below recipe serves for 2 for one meal.




Ingredients:

  • Dosa rice (make sure the rice is of good quality and white) - 1 cup
  • Grated coconut - 1/2 (take the white portion of the grated coconut and avoid the dark portion)
  • Soda powder
  • Yeast
  • Sugar
  • Salt

Preparation:

  • Day 1:
    • Clean and soak dosa rice in water for 1 hour.
    • After 1 hour, grind the soaked rice and the grated coconut in a mixer grinder.
    • In case the coconut measure is more, it will add to the taste and nothing to worry about.
    • Make a thick batter and transfer it to a vessel.
    • Add some water to the mixer grinder and take out the left over batter from the mixer grinder.
    • Heat this mixture for 1min to make it warm.
    • Add the warm mix to to the batter in the vessel and mix well.
    • Add 1 spoon salt, 1 spoon sugar, a pinch of soda and 5-6 yeast seeds. Mix well.
    • In case the climate is cold, wrap the vessel with newspaper.


  • Day 2:
    • After 24hrs, open unwrap the vessel and you will see that the batter is full of bubbles after fermentation.
    • Add a pinch of soda again, add little water if the batter is too thick. Mix well.
    • After 15 mins, the batter is ready to use.

You can make batter and keep it in refrigerator for the entire week. Refrigeration can be done from day 2.

  1. do i need to soak the yeast in water for it to ferment? That is what I do while making pizza dough. Also by dosa rice do you mean the idly rice or the sona masoori rice?

    1. Yes dosa rice is same as idly rice and yes you should add yeast on day 1 itself for fermentation.
