Bitter Gourd is not loved by many because of it's strong bitter taste. Here I've tried to bring down the bitterness of this vegetable and make a tasty curry. This can be taken with rice or chappathi/roti.

- Bitter Guard/ Karela/ Pavakka - 1
- Onion - 1
- Green chilies - 2
- Curry leaves
- Cooked Toor Dal/ Pigeon Peas (split and skinned) - 1 cup
- Sambar powder - 3 spoons
- Tamarind extract
- Turmeric powder
- Asafoetida / Hing powder
- Salt
- Edible oil
Preparation:
- Take a deep frying pan and heat ediblie oil. Stove in high flame.
- Add mustard seeds and wait to crackle. Add curry leaves and green chilies.
- Add the chopped onions and saute well till it becomes transparent.
- Add chopped bitter gourd/ karela/ pavakka and saute for 5 mins. The color should turn dark green.
- Add tamarind paste and salt. Mix well. Close it with a lid for 5 mins.
- Add the cooked dal and stir well.
- Add sambar powder, asafoetida powder, turmeric powder and stir well.
- Close with a lid and let it simmer for 10 mins. The curry will become thick by now. Switch off the flame.
This bitter gourd turned tasty curry is ready to serve.
