Tomato Onion fry with or without egg is a typical Kerala dish which can be combined with dosa/ chappathi/ roti/ phulka/ appam.
The below recipe serves for 2. I have taken this recipe from my mother-in-law.
Cooking time: 40 mins.
Ingredients:
- Tomatoes - 3
- Onions - 6
- Boiled Eggs - 2 (or 3)
- Garlic cloves - 4 (crushed)
- Ginger (crushed)
- Chilly powder - 5-6 spoons
- Cumin powder/ Jeera powder - 2 spoons
- Coriander powder - 2 spoons
- Salt
- Edible oil
Preparation:
- We need a lot of onions as they will reduce eventually during deep sauteing.
- Take a deep frying pan and pour edible oil generously (6 spoons). Add mustard seeds and let them crackle.
- Add crushed ginger garlic and saute for a min in high flame.
- Add finely chopped onions and saute on high flame for 15 mins till the onions reduce and become almost dark brown.
- Add cumin powder, corainder powder , chilly powder and salt and saute for 2 mins. Idea is to get a dark brown mixture.
- Add the chopped tomatoes and saute well. Add more edible oil and continue to saute.
- Saute till the mixture reduces and reduce the flame to low. Masala is ready now. If you do not want to add eggs, then skip the next steps.
- Peel off the boiled eggs and make 4-5 creases on them. This will allow the eggs to absorb the masala.
- Add the creased eggs into the masala and cook in low flame for 5 mins. Close it with a lid. Turn off the flame after 5 mins.
- Add coriander leaves to garnish.
This curry is very spicy and can be had even without the eggs. Either ways it will taste yummy.
