Bhindi Do Pyaza (Okra Onion dry curry)


Bhindi/ Okra/ Lady's finger is a vegetable when cooked tastes really good and also is highly nutritious. I'm going to show my way of making Bhindi do Pyaaza. Pyaaz means onion in Hindi. This is a dry curry (sabzi) and can be taken along with chappathi/ phulka/ rice.



Ingredients:
  • Bhindi/ Okra/ Lady's finger/ Vendakka - 1/4 kg
  • Onions / Pyaaz - 2
  • Tomatoes - 2
  • Ginger-garlic paste
  • Green chillies - 3
  • Red Chilly powder -  1 spn
  • Turmeric power - 1 spn
  • Dry mango powder/ Amchur powder (available in grocery stores) - 1/2 spn
  • Salt
  • Edible oil
Preparation:
  • Chop bhindi into long pieces and keep aside.
  • Chop onions into long pieces and keep aside.
  • Chop tomatoes and keep aside.
  • Take a frying pan and heat 3 tspns edible oil.
  • Put the chopped bhindi / okras into the heated oil and saute well in high flame.
  • We want the color of the okras to change to dark green.
  • After sauteing for 2-3 mins in high flame you can close the pan with a lid and keep it in low flame.
  • Keep sauteing at intervals. 
  • After 10 mins the color of the okras/ bhindis will turn to dark green. Now transfer it to a plate and keep aside.
  • Again pour 3 tspns of oil into the pan, heat it.
  • Now add the onions, green chilies and ginger-garlic paste and saute well till the onions turn golden brown.
  • Keep the mix aside when done.
  • Add 4 tspns oil one more time to the pan, heat it and now add the tomatoes and saute for 4 mins.
  • Once the tomatoes are sauteed, add the sauteed bhindi and sauteed onions into the pan and mix well.
  • Add turmeric powder, red chilly powder, amchur powder and salt and mix well in medium flame. 
  • You can also add 2-3 tspns of oil now.
  • Saute for 5mins and then close it with a lid. Let it remain closed for 5mins.


Spicy and tasty Bhindi do pyaaza is ready! Treat yourself with some hot phulkas.
