- Chop onions into long pieces and keep aside.
- Chop tomatoes and keep aside.
- Take a frying pan and heat 3 tspns edible oil.
- Put the chopped bhindi / okras into the heated oil and saute well in high flame.
- We want the color of the okras to change to dark green.
- After sauteing for 2-3 mins in high flame you can close the pan with a lid and keep it in low flame.
- Keep sauteing at intervals.
- After 10 mins the color of the okras/ bhindis will turn to dark green. Now transfer it to a plate and keep aside.
- Again pour 3 tspns of oil into the pan, heat it.
- Now add the onions, green chilies and ginger-garlic paste and saute well till the onions turn golden brown.
- Keep the mix aside when done.
- Add 4 tspns oil one more time to the pan, heat it and now add the tomatoes and saute for 4 mins.
- Once the tomatoes are sauteed, add the sauteed bhindi and sauteed onions into the pan and mix well.
- Add turmeric powder, red chilly powder, amchur powder and salt and mix well in medium flame.
- You can also add 2-3 tspns of oil now.
- Saute for 5mins and then close it with a lid. Let it remain closed for 5mins.
