It's weekend and it is time to try something different and interesting. I have tried this mushroom curry. It is inspired from the Himachal style Mutton Rara. I have replaced mutton with mushroom.
Preparation:
Ingredients:
- Mushroom
- Tomatoes - 3
- Onions - 2
- Green chilly - 1
- Lemon - 1/2
- Ginger-Garlic
- Coriander leaves
- Ghee/ Butter
- Cumin seeds
- Turmeric powder
- Red chilly powder
- Salt
- Garam masala
- Bay leaf - 1
- Cloves - 6
- Cardamom - 3
- Cumin seeds
- Coriander seeds

Preparation:
- For garam masala:
- Roast all the ingredients for garam masala directly in a pan.
- Grind them.
- Take a deep frying pan and heat. Once the pan is hot, add 6 spoons of mustard oil. Keep in high flame.
- Add the cumin seeds and wait till it crackles.
- Add the chopped onions, green chilly and ginger-garlic crushed. Saute well.
- Add the tomatoes and saute well for 5 mins.
- Add red chilly powder, turmeric powder and salt. Stir for 5-10 mins till it becomes a paste. You can add more mustard oil now if needed.
- Add the ground garam masala and stir well for a minute.
- Add the chopped mushrooms and stir well.
- Mushroom juice will start coming out now. Add little more water and stir well.
- Add ghee and stir well.
- Close with a lid for 5 mins. Keep in low flame.
- Add coriander leaves to garnish and also squeeze lemon.
Super spicy and finger-licking-good mushroom rara curry is ready. Now do some 'pett pooja' with some soft phulkas/ rotis.
