I recently tried this hot and spicy dish. It tastes amazing with phulka/roti. Cooking time is less than 20 mins. Serves 2.
Ingredients:
- Sev - 150 gm
- Bay leaves - 2
- Chopped vegetables
- Tomatoes - 3
- Onions - 2
- Spring onion (optional)
- Green chilly - 1
- Crushed ginger-garlic
- Masala paste (make a paste of all 4 masala powders with water)
- Turmeric powder
- Chilly powder
- Coriander powder
- Salt
- Edible oil
- Coriander leaves

Preparation:
- Take a deep frying pan. Add edible oil and heat well.
- Now add the bay leaves and stir for 2 mins.
- Add all the chopped vegetables, ginger-garlic, green chilly and saute well for 5 mins in high flame. Tomatoes should become paste-like.
- Add the masala-paste and stir well.
- Add sev and stir well.
- Stir for 5 mins so that the masala and sev gets mixed thoroughly and then turn off the flame.
- Add coriander leaves to garnish.
This one is mind blowing and so is a definite try! Enjoy and let me know what you feel about it.
PS: You can replace tomatoes with potatoes and try too. In this case, add 3 spoons of curd after adding masala-paste. Also squeeze 1/2 lemon at the end.
