Sev ki sabzi


I recently tried this hot and spicy dish. It tastes amazing with phulka/roti. Cooking time is less than 20 mins. Serves 2.



Ingredients:
  • Sev - 150 gm
  • Bay leaves - 2
  • Chopped vegetables
    • Tomatoes - 3
    • Onions - 2
    • Spring onion (optional)
    • Green chilly - 1
  • Crushed ginger-garlic
  • Masala paste (make a paste of all 4 masala powders with water)
    • Turmeric powder
    • Chilly powder
    • Coriander powder
    • Salt
  • Edible oil
  • Coriander leaves

Preparation:
  • Take a deep frying pan. Add edible oil and heat well.
  • Now add the bay leaves and stir for 2 mins.
  • Add all the chopped vegetables, ginger-garlic, green chilly and saute well for 5 mins in high flame. Tomatoes should become paste-like.
  • Add the masala-paste and stir well.
  • Add sev and stir well.
  • Stir for 5 mins so that the masala and sev gets mixed thoroughly and then turn off the flame.
  • Add coriander leaves to garnish.
This one is mind blowing and so is a definite try! Enjoy and let me know what you feel about it.

PS: You can replace tomatoes with potatoes and try too. In this case, add 3 spoons of curd after adding masala-paste. Also squeeze 1/2 lemon at the end.
